Spaghetti Squash with Mediterranean Deluxe Pesto
Prep and bake time: 45 minutesIngredients
1 large spaghetti squash
1 pound ground beef or turkey
1 onion
Mediterranean Deluxe Sun Dried Tomato Pesto
1 tbsp of olive oil
salt
pepper
fresh basil
Parmesan cheese
Directions
Into a large baking pan add a cup of water and place the spaghetti squash in the middle of the pan.
Into a 375 F preheated oven place the pan with the spaghetti squash and bake for 40 minutes or until it is soft to touch.
Take the spaghetti squash from the pan, place it on a cutting board and cut it in half.
Remove the seeds and then with a fork remove the insides of the squash from the skin by scraping the flesh of the spaghetti squash.
In a preheated large pan skillet add olive oil and a medium chopped onion.
Fry the onion until it is soft and slightly brown.
To the same skillet add the ground beef or turkey and fry until it has browned and remove from the heat.
Add the pulled squash to the skillet, a full jar of Mediterranean Deluxe Sun Dried Tomato Pesto, salt, pepper, and chopped fresh basil. Stir until all the ingredients are well incorporated.
To garnish add 1/2 a cup finely ground Parmesan.
