Flaky Pastry with Sun Dried Tomato Pesto

•Pre heat oven to 400 °F.

•Cut fillo dough in half.

• Place 2 sheets down on a butter coated cookie sheet.

•Butter the top sheet of fillo dough on the cookie sheet and place another sheet on top of it. Butter the next sheet and place another sheet of fillo dough on top of this. Repeat until 5-7 layers have been assembled.

•On the next layer place 3 – 4 table spoons of Sun Dried Tomato Spread and spread this thinly across the fillo dough sheet. Lay another sheet of fillo dough on top of this.

•Repeat step 3 until another 5 to 7 layers have been assembled and repeat step 4.

•Assemble another 5 to 7 layers of fillo dough and on the last layer paint on the egg yolk for a nice golden brown color

•Bake at 400 °F for 10 minutes or until golden brown. Time may differ from oven to over.

•Cut into squares to serve.
